1st Course: Coconut shrimp with bang-bang sauce
2nd Course: Caribbean salad with mixed greens, pineapple, mandarin oranges, almonds, dried cranberries, black beans, honey-lime dressing
3rd Course: Seared salmon, rice pilaf, honey-roasted pickled carrots, shaved Brussel sprouts, pineapple salsa
